Lepp’s Sweet Peach Tea

During our recent visit to Lepp Farm Market and the home of Rob & Charlotte Lepp we were lucky enough to have Charlotte make us some delicious Peach Sweet Tea, made with peaches from their orchards in the Okanagan. And lucky for you, she shared the recipe with us! Lepp’s Sweet Peach Tea

Ingredients

Peach Simple Syrup

  • 4 medium peaches, pitted and cut into wedges

  • 1/4 cup fresh lemon juice

  • 3 cups sugar

  • 1 cup boiling water

Tea Ingredients

  • 10 black tea bags

  • 1 lemon, washed and sliced 

  • 1 (2-inch) piece fresh ginger, peeled and smashed

  • 4 cups ice

  • 1 ½ cups Peach Simple Syrup

  • Additional peach slices for garnish

Directions For Peach Simple Syrup

  1. It’s not necessary to peel peaches, just cut into wedges and discard the pit. However, the sweetened peach pieces left after straining the syrup are delicious stirred into yogurt.

  2. Place the peaches, lemon juice, and boiling water in a medium saucepan.

  3. Add the sugar and stir gently. Bring to a simmer over medium-high heat. Reduce the heat to maintain a very low simmer, cover, and cook for 30 minutes.

  4. Remove from the heat. Strain the syrup through a fine-mesh sieve into a medium bowl to remove the solids.

Directions For Tea:

  1. Bring 4 cups water to a boil and add tea bags, lemon slices and ginger.  Immediately turn off the heat and let this steep for about 7-10 minutes. 

  2. Strain the tea into a large pitcher for serving.  Stir in the peach syrup.

  3. Just before serving, add peach slices.  

  4. If making in advance, briefly soak peach slices in lemon juice or Fruit Fresh to prevent discolouring.  

  5. Pour into ice-filled glasses and serve.
